Waldorf the Apple Cider Way

There are days when you do not want to have meat or poultry for dinner or lunch. You prefer a healthy yet simple meal for a change. Well, we have a solution for you whenever you feel that way. Instead of getting into all the complicated recipes and ingredients, we have put together a rather simple and devouring salad recipe for you.

This salad has a sweet and sour taste to it that serves as a treat to the taste buds.

Traditionally this salad is called Waldorf. This salad comprises of a variety of vegetables and fruits and even nuts. We have only used walnuts but you are free to use cashews or any other of your favorite nuts as well. Instead of mayonnaise, you can use plain yogurt as well.

The Waldorf salad is a complete crunchy meal in itself.

Ingredients:

Mayonnaise ½ cup
Chickpeas 1 can
Apple (chopped) 1
Red grapes 1 cup
Celery (chopped) 2 ribs
Red onion (chopped) ½ cup
Parsley (chopped) ¼ cup
Walnuts (chopped) ½ cup
Apple cider vinegar 2 tbsp
Black pepper (ground) ¼ tsp
Red pepper flakes (ground) ½ tsp
Sea salt (ground) ½ tsp
Honey 1 tsp
Dijon mustard 1 tsp
Baby spinach 4 cups

Method:

  1. Take a large bowl and add yogurt, apple cider vinegar, honey, salt, mustard, crushed red pepper and pepper. Toss these ingredients well so they tangle up properly.
  2. Next, add chickpeas, grapes, apples, celery, walnuts, parsley and onions in the same bowl. Give these ingredients a good toss. Make sure everything is mixed properly.
  3. Either in the same bowl or transfer the salad into another smaller bowl and put it in the refrigerator for at least an hour.
  4. Take it out of the refrigerator, toss it a couple of times and then serve with baby spinach.
